The kitchen at M`AR De AR Hotels group is entrusted to Chef António Nobre who has a major and important role on the dissemination of Alentejo cuisine, masterfully exploring all the aromas of the region. A true Alentejano, born in the city of Beja, he always watched with great affection the culinary arts of his mother and grandmother, his main reference in his day-to-day life. The Alentejo cuisine that he defends is based on the constant discovery of smells (from coriander, mint and oregano), flavours, such as the acidity of Alentejo bread, different from all others, the rusticity of the meat, the presence of fish from the river, and the golden dash that adorns each dish: regional olive oil. Without neglecting, of course, the desserts, which leaves a sweet aftertaste at every meal.
